Primal Coffee Banana Bread

Seeing as it’s national coffee week, we thought it would be rude not to celebrate with a delicious Primal coffee banana bread that’s grain free and packed full of nourishing ingredients. My take on the classic banana bread manages to keep it’s exact flavouring – minus the CARBs and sugar. It’s moist, light, has the perfect ratio of coffee to banana and thanks to the banana and the little raw honey that’s used, it’s sweet enough without adding any unnecessary sugar. Not to blow my own trumpet, but I think I absolutely nailed this recipe and I can see it become a firm favourite in our household (and hopefully your’s too).

To make this recipe Primal friendly I’ve replaced plain flour with one of my favourite Primal baking ingredients, coconut flour. Coconut flour is great as it’s grain free and includes many health benefits including anti-bacterial and anti-fungal properties. It’s also great for stimulating the digestive system and boosting our immune system. It’s definitely a Primal ingredient that should be stored in your pantry.

Coconut flour is made by grating the meat of fresh coconuts. The meat is then dehydrated and defatted where all of it’s oil is extracted and you’re left with a fine powder that looks like many other flours. Also, despite coming from a coconut, the flour doesn’t give off a particularly strong coconut flavour so it’s great for most bakes when balanced out with other ingredients. It’s also a great source of fibre, high in protein, contains no grains (making it gluten free) and is rather low on the glycemic index (GI). Overall, it’s the perfect Primal ingredient to use when baking.

I experimented with two main ingredients for this recipe – almond butter and coconut oil. Whilst coconut oil worked, I found it gave the coffee banana bread too much of a coconut flavour and was a bit too moist for my liking. However, when experimenting with almond butter (raw and all natural – nothing but almonds) it worked perfectly. It gave the bread the perfect texture – moist but not too moist – and the nut flavour was hidden thanks to the coffee and banana. Plus, almonds are packed with tons of health benefits including magnesium, copper, vitamin B2, fibre, protein and thanks to their healthy fats, they help reduce hunger levels.

Last but not least, I’ve made my Primal coffee banana bread incredibly easy to make with limited ingredients. All you need are 8 essential ingredients, a bowl and an oven and you’re good to go. Most of the ingredients will already be in your pantry, I’m sure!

Primal Coffee Banana Bread

My Primal take on the classic banana bread recipe. My coffee banana bread is grain free, lower in carbs, free from refined sugar and contains all natural ingredients. A delicious sweet, moist and light banana bread for all to enjoy!

Ingredients

  • 2 medium bananas organic
  • 108 grams almond butter organic and natural
  • 3 tbsp honey raw and organic
  • 3 large eggs free range and organic
  • 90 grams coconut flour light and organic
  • 2 tbsp coffee granules organic
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1 handful crushed pecans for topping - optional

Instructions

  1. Begin by pre-heating your oven to gas mark 4 and line a bread tin with foil.

  2. In a bowl, whisk together your eggs for a minute or two. Add your honey and almond butter and mix everything together. 

  3. Add the rest of the dry ingredients to the wet and mix everything together (without over mixing - this is important).

  4. Pour your banana mixture into your bread tin and top with broken pecan pieces. Pop in the middle of the oven to bake for 40-45 minutes. 

  5. Once cooked, remove from the oven and leave to cool completely. This is important so your slices don't crumble when you cut into them! 

  6. Once cool, dig in and enjoy! I always find banana bread is best when slightly toasted - try it! To keep your loaf fresh simply cover with foil pop it in an air tight container at room temperature. This will keep best for a few days!
