What better way to welcome the sunshine this week than with a Primal friendly mocktail that’s refreshing, light and full of ingredients that are good for you – not like your typical sugar loaded cocktail!
Whilst Agua Fresca’s are the perfect non-alcoholic drink, they can still be packed with sugar and artificial juices. My coconut, blueberry and lemon Agua Fresca however, is made simply by the ingredients stated in the name of the drink. Therefore, no unnatural juices that are filled with extra sugar, no hidden ingredients and certainly no thickening agents.
The coconut water used in this recipe is hugely beneficial to our bodies if you use an organic and all natural brand. If you’re buying your coconut water from a carton then please double check the ingredients as many companies like to add a little extra fructose which then makes the drink anything but Primal friendly. Coconut water is great for many reasons, a few of them being:
- Packed with nutrients and minerals that many of us may not be getting enough of
- It’s produced naturally in the fruit and contains 94% water and very little fat (not that we have to fear our fats!)
- Good source of fibre
- High in vitamin C
- May help lower blood sugar levels
- May prevent kidney stones thanks to it’s high calcium content
- May help prevent heart disease
For this recipe you’ll simply need four ingredients and a little ice, although the ice isn’t optional. To make the drink you simply blend the coconut water with ice, a little raw honey and lemon and then pour the drink into a tall glass with frozen blueberries sitting already at the bottom. I served mine with a lemon wedge for those who like their drinks a little more tangy. If you’re after a refreshing drink this summer then this is definitely one to try! Plus, it’s a great way to get the kids involved in a Primal lifestyle.

Primal Coconut, Blueberry And Lemon Agua Fresca
Enjoy the summer weather this year with my Primal friendly Agua Fresca. A deliciously refreshing drink that's packed with health benefiting properties.
- 1/2 cup frozen blueberries organic
- 2 cups coconut water organic and natural
- 2 cups ice cubes
- 1/4 tsp raw honey organic
- 6 tbsp lemon juice
In a food processor add your frozen ice cubes, coconut water, raw honey and lemon juice and blend everything together until you get a crushed ice texture.
In two tall cocktail glasses, pop half and half of the frozen blueberries in each. Now pour the crushed coconut water on top of the blueberries and serve with a slice of lemon on each glass. Enjoy!
