Primal Carrot Loaf

I’m not much of a sweet person but obviously, I am only human so sometimes the big bad sweet tooth comes around and when it does I like to steer towards a more primal approach as possible. This is where my primal carrot loaf comes into play.

I’m quite excited about this loaf actually. It’s incredibly flavoursome and packed with some very primal ingredients. I kind of had a moment where I grabbed a few of my primal friendly ingredients (baking wise), chucked it all together and hoped for the best. Did it work? Absolutely! Within the first bite, I was sold. I think it was the carrot and coconut that did it really.

This loaf is everything a carrot loaf should be (just a lot healthier!). It’s moist, moorish and dense with the amazing flavours that a carrot cake has to offer. From cinnamon, ginger, mixed spice and everything Autumnal! A slice of this loaf would be perfect for a morning breakfast option or if you’re not following intermittent fasting (which I do) then go ahead and have a slice as a snack. Just remember moderation and portion control! It’s easy to get carried away with sweet treats like these… especially homemade ones! My tip for moderation would be to have a slice and then freeze the rest for later.

To make this a primal friendly recipe I’ve kept it grain free with the use of coconut and almond flour and refined sugar-free by using a little raw, organic honey. To bring the loaf together I’ve used coconut oil, eggs and pumpkin puree. All of these are primal friendly, however, when it comes to the honey (which our ancestors did indeed have) I’ve limited it’s quantity as much as I possible. Although it’s a primal ingredient, I am aware of just how addictive and unhealthy sugar can be. Yes, honey is still sugar! 

When we eat sugar, we are not consuming any helpful vitamins. Sugar does not possess any of the vitamins or minerals our bodies require. Zero! So let's say you have on average 6 cups of coffee and you have two spoons of sugar in each cup. Chances are each spoon has 30 calories heaped upon it. So that’s 60 calories per cup, multiplied by your six coffees a day and all of a sudden you are consuming 360 empty calories a day. Now, even the largest person who will ever read this book will have a limit to the number of calories they can consume in a day, but to keep it simple let's assume you consume above average and that you are currently in-taking around 2880 calories a day. That means that one-eighth of your intake is from empty calories. That means that one eight of your intake, even if it wasn’t doing you any harm (which of course by now you know it is wreaking havoc inside your body) isn’t providing you with any of the vital stuff you need.

So why use raw, organic honey? As I said, the primal man did indeed indulge in honey and natural sugar such as fruit, so in my books, I like to think we can use honey but in extreme moderation. In recipes like this, I think it’s ok because we’re not using an obsessive amount. Instead, we’re relying on the sweetness from the coconut, almond, pumpkin puree and spices. On top of that though, honey isn’t quite like sugar in regards to the fact that it has empty calories. Honey (the good stuff – raw and organic) is actually packed full of vitamins, trace enzymes, amino acids and minerals like calcium, iron, sodium chlorine, magnesium, phosphate and potassium. Also, because of its take toward the acidic PH level (3.2 to 4.5), it helps reduce bacteria growth.

I could carry on about the health benefits of honey but I think I’d like to continue that in a separate Primal Cure blog post all about sugar and ‘healthy sweeteners’. Hold tight for that one!

If you are going to use a sugar replacement though, then honey is probably one of the best sweeteners out there created by nature. Just know your limits and don’t make it a consumption habit!

So with that said, whilst this recipe may not score a 10/10 on my primal recipe rater, it’s probably one of the healthiest and most primal sweet recipes that you could bake for the family. Plus, this recipe is so good that I bet they won’t even be able to tell that it’s healthy and primal!

Primal carrot loaf

In the mood for something sweet? This delicious, moist and flavoursome carrot loaf cake is not only primal friendly but it's full of amazing primal ingredients, too!

Ingredients

  • 2 cups almond flour
  • 2 tbsp coconut flour
  • 3 large organic eggs
  • 2 tbsp coconut oil
  • 1/3 cup pumpkin puree homemade (not canned)
  • 1/3 cup grated organic carrots
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp mixed spice
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 cup walnuts
  • 3 tbsp raw and organic honey

Instructions

  1. Begin by preheating your oven to gas mark 4 and line a bread tin with parchment paper. 

  2. In a bowl whisk together your eggs, honey, coconut oil and vanilla extract. 

  3. Once your wet ingredients are mixed together add your pumpkin puree and whisk again.

  4. In a separate bowl, add together your dry ingredients and mix everything together.

  5. Slowly, add your dry ingredients to your wet ingredients, making sure to stir as you do.

  6. Once your wet and dry ingredients are mixed together, turn the whisk on and finish off the mixing. 

  7. Mix in your walnuts and then pour the mixture into your bread tin.

  8. Before popping your loaf into the oven, sprinkle the top of your carrot loaf mixture with cinnamon and a few more crushed walnuts.

  9. Place your loaf into the middle of the oven to bake for 50 minutes.

  10. Once cooked, remove from the oven and leave to cool thoroughly before slicing. Enjoy!
