Crispy Chilli Avocado Chips with Primal Tomato Ketchup

If there's one thing that helps me naturally de-stress on the weekends then it's definitely got to be cooking with my family. I love cooking and always have done. Since turning Primal I especially love experimenting with the most weird and wonderful ideas - mostly to prove to everyone that eating healthy really doesn't have to be boring and repetitive. 

Recently I decided to get a little adventurous with one of my favourite vegetables, avocados - and with the help of my children we came up with a delicious chip recipe. Now, I don't literally mean your crunchy deep fat fried kind of chip. I actually mean a crispy baked avocado chip that's quite frankly, more delicious than it sounds. 

I personally think that if you can take an unhealthy recipe and turn it into something much healthier and that's packed with 10x more vitamins and nutrients but still tastes pretty great, then eating healthy can be pretty special. So far, my egg fried rice creation has to be one of my favourite dishes. I managed to take a popular unhealthy takeaway dish and turn it into something that's not only healthy, but Primal friendly too. My family and friends absolutely loved that dish!

If you've already tried the classic avocado chip recipes online then you'll know two things: they're incredibly soft on the inside and deliciously crispy on the outside but, they're also pretty plain. Therefore, I've decided to get a little creative with the avocado chip coating and believe me, it really does taste like fried crispy breadcrumb. Pair that with my rich Primal friendly tomato ketchup sauce and you really will have your taste buds going crazy.

Thanks to the flaxseed flour that's included in the coating of the avocado chip, these little green chips have quite a lot to offer in terms of goodness. So what exactly are flaxseeds? They're a tiny seed that have been consumed for at least 6,000 years and despite their size, they're considered one of the most popular superfoods. You see, flaxseeds contain anti-inflammatory omega 3 fatty acids making them a popular go to ingredient for increasing your fat intake. They also contain antioxidant substances called lignans that help maintain healthy hormone levels, which are essential for a healthy functioning body. Flaxseeds are also great for promoting healthy skin complexion, digestion, cardiovascular health and are said to even help those pesky sugar cravings.

To make this recipe all you need are a few simple ingredients and a little patience to perfect your avocado cutting skills. You'll also want to buy two ripe (but not overly ripe) avocados that will stay in tact when cutting. An avocado that's too soft (aka perfect for mashing) will be pretty useless for a recipe like this. 

When it comes to making the Primal friendly tomato ketchup sauce, simply pop all of your ingredients into a food processor and whizz until creamy. This has got to be one of my favourite sauce creations so far! It's rich, boasts a beautiful flavour of deep tomatoes and the oregano compliments the sauce very well. In fact, I have to say I much prefer this tomato ketchup recipe than the original and I'm pretty sure you will too!

Crispy Chilli Avocado Chips with Primal Tomato Ketchup

Ingredients

Avocado Chips

  • 2 ripe (but still hard) organic avocados
  • 1 tsp smoked paprika
  • Pinch of chilli flakes
  • 80g almond flour
  • 20g flaxmeal flour
  • 1 tsp oil (avocado/coconut/extra virgin olive oil)
  • 1 egg
  • Pinch of salt

Primal Tomato Ketchup

  • 1/2 cup tomato puree
  • 1/2 cup tinned tomatoes
  • 1 tbsp organic raw honey
  • 2 tbsp apple cider vinegar
  • 1/3 fresh onion - diced
  • 1 tsp oregano
  • Pinch of salt and pepper

Method

  • Begin by pre-heating your oven to gas mark 4.
  • In a bowl mix together the two flours, spices and salt and stir everything together.
  • In another bowl, crack your egg and whisk. Leave to the side whilst you peel and slice your avocados into thin chip sizes.
  • One by one, place your avocado chips into your egg bowl and cover completely with the liquid. Remove from the bowl and then cover your chip completely with the flour mix. Once done, pop your chip onto a baking tray with a little oil and repeat this process until all your avocado chips are covered.
  • Once done, place your baking tray into the middle of the oven and bake for 20-25 minutes or until golden.
  • Remove from the oven and leave to cool. Trust me, these avocado chips are much tastier when enjoyed cool as the avocado hardens back up!
  • Whilst your chips cool, place all your ketchup ingredients into a food processor and whizz together. Once you have a smooth ketchup paste, pour it into a dipping bowl and enjoy!
