Caramelised Strawberry and Coconut Primal Ice Cream

With the UK's never-ending heat wave, I figured it was about time to make a delicious ice cream recipe that's not only Primal friendly but tastes just like the real deal. So today my Primal friends, I'm bringing you a delicious low carb, refined sugar-free and all-natural caramelised strawberry and coconut ice cream.

You'll find that there are tons of Paleo and Primal ice cream recipes out there that consist of just fruit and coconut milk, however, my recipe includes the most Primal friendly ingredients and, by using a secret ingredient, I've managed to make it as creamy and light as possible. On top of that, I've decided to upgrade your classic strawberry ice cream with a little caramel flavour for a truly indulgent, yet perfectly healthy, sweet and mouth-watering treat.

The top secret ingredient? Chia seeds. If you've tried my Chia Parfait recipe (perfect Primal breakfast) then you'll know just how amazing those little seeds are for creating a thick and jelly-like texture. Despite their small size, chia seeds are packed full of important nutrients. They're an excellent source of Omega-3 fatty acids, fibre, iron and calcium and are rich in antioxidants. Well known benefits of chia seeds, when included in our daily diet, including the reduced risk of obesity, heart disease, diabetes, increased energy and the promotion of a healthy complexion (thanks to those fatty acids). In fact, did you know that chia seeds, when mixed with water, are great for replacing an egg when cooking? Perfect for all you vegans out there.

As for the coconut milk, it's also another magic ingredient that will give you the creamiest of Primal ice creams. Unlike cows milk, coconut milk is completely lactose-free. While Primal Cure is not against organic cows milk (even though if we think about it, it's not entirely Primal), coconut milk is definitely more beneficial to our overall health and is produced by grating coconut flesh and then soaking it in hot water. The thick cream then rises to the top, where it is skimmed off and the remaining juice can be filtered and bottled as milk.

So why is coconut milk so beneficial to our health? It's one of the richest sources of medium-chain fatty acids (MCFAs) and, as if that wasn't enough, it's the closest thing for sale in a can or bottle that's incredibly similar to human breast milk. It's also great for improving blood pressure and lowering cholesterol levels. So there you go, coconut milk is no normal fat!

I've always preferred fruit flavoured ice creams for a refreshing treat, and with strawberries being one of the most Primal friendly fruits, I figured that it'd be the perfect ice cream flavour this summer. Plus, thanks to the strawberries, the ice cream has a beautiful rich colour, which just goes to show that artificial colours aren't necessary at all!

Thanks to the caramelised strawberries, this recipe is sweet enough as it is and requires no sugar. In fact, to make the caramelised strawberries all you need are 3 Primal friendly ingredients and you're good to go. No sugar, no artificial flavours and definitely no ingredients you can't pronounce. On top of that, you also don't need to worry about having an ice cream maker on hand. This recipe is incredibly easy to make and requires only 10 minutes of your time to prepare.

First you'll need to caramelise the strawberries in a hot pan with a little coconut oil and raw organic honey, then, once browned, pop the strawberries in a food processor with the coconut milk, whizz together and then pop your ice cream in a tub and place in the freezer to set for a while. That's it! Then when you're ready to tuck in, remove your ice cream from the freezer, leave to defrost until you get a creamy soft serve texture and then dig in! Eating it when it's still completely frozen will only give you an icy texture so be patient with the defrost. It'll be worth it, I promise.

Last but not least, please make sure you use full fat coconut milk that's as natural as possible. Going for a 'light' coconut milk will not only leave you with a less creamy ice cream texture but it'll make the coconut milk less natural and most probably not at all Primal friendly.

Caramelised Strawberry and Coconut Primal Ice Cream

Ingredients

  • 2 punnets of fresh organic strawberries
  • 2 x 400g cans of full-fat organic coconut milk
  • 1 tbsp raw organic honey
  • 1 tsp organic coconut oil
  • 1/4 cup chia seeds
  • 1/2 cup extra fresh strawberries (for chunks)
  • 1 tsp cinnamon

Method

  • Warm a pan with 1 teaspoon of coconut oil and add 2 punnets of strawberries. Drizzle a tablespoon of honey over the strawberries, add the cinnamon and brown the strawberries on medium heat for 5 minutes. 
  • Once caramelised, remove and place the strawberries in a food processor. Add the coconut milk and chia seeds and blitz until smooth.
  • On the side, chop 1/2 cup of extra fresh strawberries into chunks and pop them into the food processor and mix by hand.
  • Once done, pour your ice cream mix into a bread loaf tin/tub and place in the freezer to set for 1 - 2 hours. 
  • When ready, remove from the freezer and leave to defrost until you have a creamy soft serve texture.
